So I have not successfully bought normal groceries since traveling home for Christmas. Just basics and eating out more than I was willing to admit. I even started using pantry stuff like oatmeal grinding it up in my favorite appliance and adding flax to make my own fiber/protein pancakes so I could use the syrup up.
You guys. I have an empty fridge. Empty freezer. Almost empty pantry.
It’s made for bizarre things. If you follow me in instagram I had a fun taxi to urgent care while at Disneyland. So returning home I was still sick and exhausted.
Well, I am ashamed to say as a health department child…I was giving myself daily doses of food posining. Or that’s my version.
I made a pork roast and decided to use different sauces each day to make It interesting as I waited to go grocery shopping.
Enter 3 days of misery. I happened to start wiping down down my deserted fridge and noticed…oh hey SUPER EXPIRED sauces I keep using on in my food. *facepalm*
This led to a lot of are you kidding me! Moments. So refusing to buy groceries still I have been working on my pantry and making wonderful things like this

Best creation yet, and hey I am feeling a million times better!
Around 2 tablespoons of Ground up oatmeal in my food processor mixed with ground flax
1/4 cup pumpkin purée
1 egg
1 egg white
Spices like nutmeg and cinnamon
I or two tablespoons of pecans
Low low LOW heat. Melt coconut oil, drop the super thick batter in..spread it out…flip after a minute or two, flip, cook another 2 minutes , flip and repeat till cooked through.
I do not have any sugar free syrup left, which made entering this into myfitnesspal devastating!! Using everything up is nice but I had so many unopened items expired too! Oi. I was angry throwing it away. It was at myself but I have been working hard on a meal plan (still) and plan to not allow purchases off the list and things that can expire are used up in a month or no new purchases.
In other news I am down 11 pounds this month! How are you guys doing??

Oh dear! The expired food thing always makes me so nervous. I’m always checking dates and whatnot.
Congrats on the 11 pounds down! I’m down 1.8 this month, with an overall goal of 15 total. 🙂
