Super Easy Carrot Cake in a loaf pan and Cream Cheese Glaze
I am in love with any cream cheese covered bake good, and this easy carrot cake loaf just happens to be an absolute favorite of mine. Also, now that I have two toddlers, anything that I can slice up, call cake, and shove a vegetable in undetected is even better!
I love to mess around with adding different veggies or fruits to change up my “carrot cake” loaf, you can easily make this into muffins to eat some now and freeze the rest for those days you just need cake and have no willpower to make it! I prefer loaves because well.. the loaf pan is SO EASY TO CLEAN.

Recipe for: Carrot Cake Loaf with Cream Cheese Glaze

Prep time- 10 mins, Bake- 45 mins
Ingredients:
  • 1 cup grated carrots (about 2 medium)
  • 1 cup flour
  • 2 eggs
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 cup sugar
  • 3/4 cup vegetable oil
  • 1/3 cup chopped walnuts
  • 1/2 cup crushed pineapple
For glaze:
  • 4 oz cream cheese  (room temperature)
  • 1/4 cups butter (softened)
  • 1 tsp vanilla
  • 1 cup powdered sugar
Directions:
  •  In a large bowl combine flour,baking powder,baking soda, salt, and cinnamon.

Easy Carrot Cake for Easter with Cream Cheese and Pineapple

  • In a separate bowl cream together sugar, eggs, and vegetable oil.
  • Add the wet ingredients to the dry ingredients and mix until well combined.
  • Then in order add the carrots, pineapple, and walnuts.

  • Pour into greased loaf pan.
  • Bake at 350 about 40-45 mins until toothpick comes out clean
For Glaze:
  1. Combine all ingredients and mix.
  2. Microwave until pourable.
  3. Drizzle over warm loaf.
